Fonio is an ancient grain that is not very well known to the public. It comes from northwest Africa from a region bordering the Sahara Desert known as the Sahel. Fonio is being touted as one of the most nutritious grains in the world, and foodies in the know are abandoning Quinoa for it.
I love ancient grains and wheat alternatives. Currently, I have a number of AP flour alternatives in my frig that I love to cook with (almond, coconut, lupin, chickpea). I hadn’t heard of fonio before so I’m pretty excited to try it. After reading your article, I found a number of organic fonio-based products online that I’m excited to try. It seems that some add it to pancakes, waffles, crepes, etc., to boost nutrition. It also seems to work nicely in breads and other baked products. I also saw mention of serving it porridge style! Thrive market has fonio chips, cereals, and other yummy snacks so I’m going to check that out. Maybe I can even sneak it in the grandkids food lol. I’m always looking for white flour alternatives because while they initially make me feel full, too full in fact, an hour later and I’m ravenous! That’s the result of an insulin spike right?
